All of these left over mashed potato's? Made too much I think? Besides reheating them I haven't a clue. Then again there is just too much left, I'd be eating reheated mashed potato's for days at this rate. There's also an abundance of Ham left over. A guy can only eat so many ham sandwich's you know before even we get tried of them. I suppose I could make Ham and cabbage soup out of it, but that only flips the problem of too much ham left. Making soup out of it I'd end up with too much soup. I'd freeze it, both the soup or the ham..but that never ends well..months later you find it frozen in the back of the freezer and say " what the fuck was I thinking? " By then the ham is freezer burned, or the soup has formed ice crystals in it and it's inedible. The daughter already took a lot of the left overs home as it is, so I can't pawn it off on her either. The Grands didn't eat much Christmas day, that's the reason I have so much left. The one Grand daughter wouldn't even try any of the ham, the other Grand daughter has really only started on solid foods and the Grand son was more interested in the eggnog, and the matchbox cars I got him than eating anything, well that and trying to keep his Nerf gun away from his parents afraid they't lose all the sponge darts that came with it playing with it.

I'd invite some friends over for a "leftover" dinner but with the weather being so crappy and the driving in the snow so sketchy no one would come, then again I've not many friends to invite over either, and I'm sure they are faced with the leftover problem from their own dinners any who.

Ah well, I'm sure I'll figure something out? But really if any of you has an idea...let me know.

Down here when we have leftover mashed potatoes we make Patty cakes out of them that's what we call them, and with the ham I had some in the freezer and I put it in my pinto beans today.

The Light is shinning and she is lonely and waiting in the darkness.

You can make potato pancakes out of leftover mashed potatoes. Use 2 cups of mashed to 1/4 cup flour, 1 egg, and salt & pepper. You can add in any favorite veggies here to mix it up - peas, carrots, spinach, etc. Shape the patties into pancakes and fry in a bit of oil or butter on both sides. Enjoy!

Ham steak or slices heated in a skillet with potato pancakes.
Ham and potato soup. You can blend the mash spuds or leave them in s,all chunks. Top with cheese, diced onion.
Omelet with ham and cheese.
Take mash spuds and flatten into 2 patties. Cook in skillet. Flip and add ham slice to one and cheese to the other. When they get cooked on that 2nd side, stack and eat with a fork. Can also ladle gravy over them.
I add cooked onion to all of the above. Also salsa.
If you like bread you can use mash spuds to make potato bread.
