They ripen very fast.. To slow that down wrap the cut stalk end in clear plastic wrap to keep away from air it will slow the process, Try it

I've seen a Gadget that sits on counter top to hang banana's on !! Their Supposed to last longer by being hung than laying down !! ------ Just re-read that last line !!! NO Pun Was Intended !!!!

I work for a grocery store....

Bananas are shipped in an oxygen free container, which stops them from ripening. The moment that seal is broken, they start to ripen. Boss #1 had a thing about bananas... I've gotten more than one lecture. There are 8 stages of ripeness, most people end up buying them at stage 3. Laying the bananas on the counter, hitting the end of the banana, and a high temp environment will make them ripen faster.

Oh, I hear you on those nightly leg cramps; they've plagued me for years.

I eat bananas when they have a few spots, as they taste sweeter to me at that point. Where I buy mine, they tend to be still in various stages of green, but will turn ripe within two to three days.

I have noticed that if they've been close to something that gives off heat (coffee pot, toaster, etc), that they tend to get ripe very fast. I have set them in a wire bowl in a cool place (not the pantry), and this seems to be better; they don't turn as fast under other situations.

I take a 100 mg potassium pill at night with dinner, or right before bedtime. This has worked for me 99% of the time for leg cramps at night; I don't experience them nearly as much as I did. Keeping up on your daily intake of water also helps. Doc has told me that you sweat out a liter a day just by regular breathing, and more so in hotter months. So water, water, water.
